Ingredients

1 soup hen
1 bunch soup-vegetables

Instruction

3 Pounds Boneless Chicken Breasts, Cut Into 2-Inch Pieces
1 Tablespoon Dry Sherry
1 Tablespoon Soy Sauce
1/2 Teaspoon Salt
2 Eggs
2 Cups Vegetable Oil
1/4 Cup Cornstarch
1/2 Teaspoon Baking Powder
1/3 Cup White Sugar
1 Tablespoon Cornstarch
1 Cup Chicken Broth
1 Tablespoon Lemon Juice
1 Teaspoon Salt
1 Lemon, Sliced
2 Tablespoons Vegetable Oil

Instructions

Take a bowl and add chicken, soy sauce, ½ teaspoon salt and sherry sauce, mix well.
Cover and place into refrigerator for 20 minutes.

In separate bowl add cornstarch, eggs and baking powder, whisk well.
Add chicken pieces and toss well. Place aside.

Heat 2 cup of oil in deep pan and fry chicken pieces in batches.

Instructions


1. Mix the ingredients for the batter in a bowl until smooth with no lumps.

2. Heat oil in a pot to 340°F.

Ingredients

1 cup cider vinegar
3/4 cup mayonnaise

2 lbs. boneless chicken breasts

Marinade ingredients:

¼ cup vinegar (white or apple cider)
2 teaspoons minced ginger
¼ cup soy sauce
1 cup beer (Lagunitas little sumpin)
½ teaspoon salt
¼ teaspoon ground black pepper
2 limes
1 teaspoon turmeric powder
1 teaspoon annatto powder

Basting sauce ingredients:

3 tablespoons soy sauce
2 tablespoons margarine

Instructions

Lay the boneless chicken breasts flat on a chopping board. Cover with a cling wrap. Flatten by pounding with a meat tenderizer tool. Set aside.

Make the marinade by combining the marinade ingredients in a large bowl, Mix well. Add the pounded chicken breasts. Marinate for at least 3 hours (I usually marinate overnight). Don't forget to cover the bowl and place inside the fridge.

1 ounce hot chile paste
1 teaspoon distilled white vinegar
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1 (8 ounce) can water chestnuts
4 ounces chopped peanuts

Instructions

To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a glass dish or bowl and add marinade. Toss to coat. Cover dish and place in refrigerator for about 30 minutes.

To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.

Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.
